鱧（はも）／Pike conger（Hamo）

The hamo is a saltwater fish belonging to the Hamoididae family of the Anguilliformes order, and it is an essential ingredient in summer Japanese cuisine.

Although it has a long, slender body similar to that of an eel, it is characterized by its larger size and more aggressive nature.

Because it contains many small bones, a process called “bone-cutting” is necessary before cooking.

You can enjoy its delicious flavor prepared in various ways, such as tempura, clear soup, and grilled dishes.

Starting in September, dishes combining matsutake mushrooms and hamo—such as hot pots, chawanmushi, and dobinmushi—are particularly popular!
