The research on sturgeon aquaculture in Miyazaki Prefecture began in 1983. After decades of trial and error, the masterpiece "Miyazaki Caviar 1983" was born. Many international guests are surprised to learn that Japan produces caviar, but nurtured in crystal-clear natural water, its quality is truly world-class.

Its greatest charm is its pure umami. Unlike heavily salted imported varieties, this fresh caviar uses no preservatives and minimal salt, revealing a creamy, melt-in-your-mouth texture.
